After a day of 30 degrees or just back from the beach, you naturally don't feel like cooking for hours and are probably ready for something fresh. Then this is the perfect pasta! Fresh, quick, and delicious!
That was exactly what I needed after weeks of 30 degrees. Fortunately, there is always a breeze here in the mountains, so that makes it a lot more bearable!
This is also the first recipe from my new little house in Italy, so that deserved to be celebrated with a nice bottle of Lugana with the dinner! This wine is also becoming a bit more popular in the Netherlands, so it must surely be available somewhere, but otherwise a nice Soave isn't bad either!

Ingredients
200 gr Calamarata (or Paccheri)
2 beefsteak tomatoes
300 gr prawns in the shell
1 Burrata
Garlic
Basil
Salt
Pepper
Spicy oil, if desired
Preparation
Cut the beefsteak tomatoes into small pieces. Heat olive oil in the pan and add the garlic and basil. I used 1 clove of garlic, because I don't always tolerate it very well, but feel free to choose whatever you like best! After a minute, add the tomatoes until they start to release their moisture, then add the prawns. Season to taste with salt and pepper.
Meanwhile, bring enough water to a boil and cook the pasta according to the instructions on the package. I used Calamarata, but this is harder to find outside Italy. If a specialty store doesn't have it, they almost always have Paccheri, which is a great alternative for this dish!
Let the tomato sauce simmer until it starts to thicken, adding some pasta water in between.
Drain the pasta and add it to the tomato sauce as soon as it has thickened.
I choosed to remove the prawns from the sauce in between and peel them, so I could put them back into the sauce along with the pasta. Of course, you can choose to peel it while eating.
Divide the pasta among the plates and finish with the Burrata and basil. I liked adding a bit of spiciness, for example with spicy oil, but this is certainly not a must! This pasta is delicious without it, and ofcourse just a little fresher!
