The zucchini flower, a slightly less well-known product here, but in Italy you find them everywhere. And rightly so, because they are truly delicious!
I bought them from a wholesaler (that is convenient if you work in a restaurant), but who knows, you might also find them in greengrocers. If you grow a zucchini plant yourself, do not throw away the flowers, but use them for this delicious recipe!
Ingredients
4 zucchini flowers
240 grams of flour
120 ml sparkling water
120 ml Italian beer
Mozzarella Maxi
4 Anchovies
Salty
Frying oil
Preparation
Mix the flour, salt, sparkling water, and beer in a bowl. It should remain slightly liquid.
Meanwhile, cut the mozzarella into strips the same length as the zucchini flower. Place an anchovy on top, fold it in half, and push it into the zucchini flower. Do this very carefully, as you do not want to break the flower. Make sure to close it tightly again afterwards.
Heat up the frying oil.
Dip the zucchini flower into the mixture, ensuring it is completely submerged. Hold the flower by the bottom and dip the tip of the flower into the oil first to seal it. Then place the entire flower in the oil. Wait until cooked; it does not need to become very brown or crunchy.
Place them from the oil onto a paper towel so they drain off the frying fat, and there you have your fried zucchini flowers!
Buon appetito!
