Not afraid of dirty hands and a messy kitchen while cooking? Then try making Gnocchi yourself! Super easy and fun.

It doesn't take an awful lot of time, so it's definitely a dish you can make by yourself, but it's also great to make with your date or with your kids, just to name a few examples.

This time we are making gnocchi di ricotta, but di patate will follow soon!

I finished it as gnocchi pomodoro (you can read how to make this sauce in my first blog), but this also works perfectly with pesto or crema di formaggio. Cuciniamo!

Ingredients

  • 300 g flour (and some extra for kneading)

  • 500 g ricotta

  • 1 egg

  • 1 tbsp Grana Padano

  • 1 tsp salt

Preparation

Scoop the ricotta into a large bowl, along with an egg, the Grana Padano, and the salt. Mix this well with a fork until it becomes a smooth cream. Now add the flour little by little, continuing to mix with the fork. As soon as it starts to resemble a ball of dough, begin kneading with your hands.

Remove the ball of dough from the bowl and knead well again. Roll it out with a rolling pin. Cut strips from the dough and cut the sticks into pieces. I have a special gnocchi board that I run the pieces along to create the stripes, but if you don't have one, you can also use the back of a fork. Make sure there is enough flour on the gnocchi so they don't stick together, or keep them well separated.

Bring water to a boil and add the gnocchi. As soon as the gnocchi start to float, they are ready. There is your homemade gnocchi!

Buon appetito!
