After spending a few days in bed with the flu, I was really ready for something more filling than crackers and broth. So Minestrone seemed like the perfect dish! This is a thickened soup, so it is quite filling, but it is also packed with vegetables. That way, I got the vitamins I had been missing these past few days right away. I asked Cris's mother for the recipe, so it doesn't get a better Minestrone than this!
Ingredients
cauliflower
Zucchini
Eggplant
Broccoli
Pumpkin
Potatoes
Tomatoes
Lentils
Chickpeas
Brown beans
Onion
Vegetable stock 2x
Olive oil
Turmeric
Preparation
Cut all the vegetables; it is mostly a lot of chopping, but after that, you'll be done nice and fast!
Bring 3 liters of water to a boil and add all the vegetables and the vegetable stock (not the 3 types of beans yet). As soon as the vegetables start to soften slightly, add the lentils, chickpeas, and kidney beans. Let this cook for another 5 minutes.
Let it cool down slightly, then puree the soup. Divide this among the plates, add a little olive oil and turmeric to each plate, and your Minestrone is ready!
Buon appetito!
